Berry Frozen Dessert Introduced in Phase 3 of Anti-Inflammation Diet
This recipe is in Phase 3 because of the guar gum that comes in most canned coconut milk. Guar gum doesn’t get introduced into the diet until Phase 3. We did find one brand that doesn’t contain guar gum. If you use Natural Value Organic canned coconut milk this can be a Phase 1 recipe!
We call for canned coconut milk, rather than homemade because the canned milk separates from the liquid making a very thick cream. Unfortunately, without that cream, your frozen, ice-cream like dessert doesn’t resemble ice cream at all. Trust me, my mom tried and tried because she really wanted this to be a Phase 1 recipe.
We recommend some of our favorite canned coconut milks on Our Favorite Products page. We chose these specific brands because they come in BPA-free cans.
Its best to eat this soft-served ice cream imposter the day you make it. If not, be sure to take it out of the freezer at least a half an hour before serving.
- 6 oz. frozen strawberries, raspberries, blackberries or blueberries or a combination
- 1 cup coconut milk, canned
- a pinch of sea salt
- 1 teaspoon vanilla
- 2-4 drops stevia, optional
- Put the frozen berries into the food processor. Pulse several times until coarsely chopped.
- Add the remaining ingredients. Pulse until smooth.
- Place in a container and freeze for two hours before serving.
