Blueberry “Yogurt”

Ingredients
  • 6 tablespoons water
  • 2 tablespoon chia seeds
  • 2 tablespoon coconut butter*
  • ½ cup fresh or frozen blueberries**
  • ¼ cup almond milk
  • 2-4 drops liquid stevia (optional)
  • 2 tablespoon chopped walnuts or almonds (optional)
Instructions
  1. Combine the water and the chia seeds in a small bowl and allow to stand about 5 minutes or until they form a gel. Stir the seeds and water after about 5 minutes.
  2. Place the seed mixture and all of the remaining ingredients (except the nuts and stevia) in the bowl of a food processor and run for about 1 minute until well blended.
  3. Add a few drops of stevia, if desired and stir again.
  4. If desired, top with chopped nuts before serving.[br]

* You can purchase this at health food stores or online.[br][br]** Substitute blackberries or raspberries for additional flavors.
